Set in the heart of the world’s most highly renowned Chardonnay village, Chablis, Lisa completed the entire building redesign, creation of the logo and, all of the corresponding interiors of the award-winning gastro-pub.
Chablis is one of the most widely recognized French wine regions. Chablis produces incredible Chardonnay wines which are long lived and magical. These Chardonnay wines are produced exclusively from four “appellation zones” or “AOC’s”: Petite Chablis, Chablis, Chablis Premier Cru and, the most exclusive, Chablis Grand Cru.
In true French fashion Mr Fabien Espana (an award winning restauranteur who refuses to participate in the Michelin competition) calls his new Gastro-Bar, “Chablis Wine Not”.
Mr Espana has a globally recognized record of restaurants with “Le Soufflot” and “Au Fil du Zinc” and chose Lisa Bond because of her exacting attention to detail and her profound emotional connection to each project.
The new venture has been recognized as the pinnacle for Chablis wine tasting & food paring winning awards in 2022 & 2023.
Lisa’s design of “Wine Not” includes a world-class “Chablis Wines Only” cellar which houses more than 2000 rare and sought-after Chablis wines. “Wine Not” in Chablis sets the trend for wine enthusiasts and gourmet foodies wanting to sample the best of Chablis paired with Burgundian gastronomy.
The “Wine Not” building has 3 levels and underwent an extensive renovations.

The original premise wasn’t particularly attractive as a quasi-modern, post WWII, concrete edifice. It had suffered mass destruction during the second world war; however, with approval from the French Heritage Architects, the “ABF”, Lisa was able to clad the exterior in timber, softening the harshness, and accentuating “Wine Not’s” semi-industrial charm.
The interior design is modelled after an urban industrial loft; accentuating the panoramic views of the town centre.
Lisa insisted on keeping the original terrazzo floor, a touchstone to the beauty of it’s 1970’s past and accentuated the wide sweeping staircase by cladding it in solid oak. The ground floor layout opens out into the heart of the village, and though it is only 90m2, it feels spacious & inviting. The ground-floor holds the restaurant, the bar, the “Espana” Show-Kitchen and, the wine boutique.

The small kitchen was specifically designed to ensure that the Michelin classed chefs, Tomoyuki Nishino & Manabu Sato could interact with their guests at all times. The large induction cooker is centre stage, with the actors performing astonishing culinary feats of Asian/French fusion taste-teasers that pair beautifully with the Chablis collection. The upper level has a professional wine tasting area for larger group tastings, and an intimate lounge area, finished off with large exterior private terrace. These spaces are all kitted out with quirky industrial furniture which marries the past with the semi-industrial loft living. The other main attraction of “Wine Not” is the floor-to-ceiling bespoke glass encased rare-wine private cellar which was specifically designed by Lisa Bond to meet the exacting storage criteria for Chablis wines.
